Tums and zucchinis...

Hey there everyone!
Making pizza did not work out today sadly. The guy and I went out to hang out with friends last night and I wasn't feeling well. This morning I felt mostly better but pizza man woke up feeling terrible. I guess I got him sick, whoops! Either way most of the day was spent curled up in front of the telly with the puke bowl and a bottle of tums.
So far today I've had a two zuccini bread cup cakes (recipe below)with peanut butter and have been munching on blue berries. Super yummy swiss chard for dinner and maybe a little sorbet for dessert. I haven't eaten too much because I'm still feeling a little under the weather. I'll try again tomorrow to make pizza.
Anyone have any home remedy's that are easy to stomach and taste good?


I was inspired to make this because there was a homeless giant zucchini up for grabs and I hate to waste a good vegetable.

Zucchini Bread:
-2 c peeled grated zucchini
-2 c sugar
-3/4 c apple sauce (or any other egg substitute that is the equivalent to 3 eggs)
-1 c veggie oil
-1 tsp vanilla
-3 c flour
-1 tsp salt
-1 tsp baking powder
-3 tsp cinnamon
-1 dash ginger (optional, I just love ginger!)

Feel free to add walnuts or chocolate chips if you like :)

Preheat 325 degrees F
Mix dry ingredients together and stir. In a separate bowl mix together zucchini, apple sauce, and vanilla. Combine all ingredients and put into a greased bread hour for pan or into a cupcake tin.
Cook for about an hour for bread and around 30 minuets for cupcakes (depending on the saze of the tin)
Tip: To make taking bread out of the pan easily, let it sit for five minuets before removing from pan because the bread shrinks when it cool.

I love eating this with margarine or peanut butter and a big thing of vanilla almond milk.

Not your ordinary Salad!

I'm not a huge fan of salad. I know that is lame of me as a vegan but piles of iceberg lettuce and oily dressing just doesn't do it for me. I wanted something hardier like a pasta dish. So tonight I made Ferro salad for dinner. It sooo was delicious!!! If you've never tried ferro salad I encourage you to. It's simple, hardy, and healthy!

Ferro Salad
Ingredients:
-2 3/4 c water
-2 c farro or barley works just as well.
-1 small onion. Half of the onion cut into fine little pieces and the other half into very large chunks
-1 garlic clove cut into fourths
-1 handful of parsley
-1 pint grape tomatoes or 1 to 2 large tomato cut up
-1 handful of basil
-2 tsp salt

Dressing:
-1/4 c olive oil
-1 tbs balsamic vinegar
-1 tbs red wine vinegar
-2 tbs honey

In a saucepan bring water, ferro, garlic, 1/2 the bundle of parsley, the large onion chunks, and salt to a boil. Reduce heat and simmer until most of the water is gone (10-15 minuets). Let sit for 5 minuets and remove onion, garlic, and parsley. Little bits of parsley left over are okay.
Heat up the finely cut onion until brown and sweet. Be careful not to burn them. Put them aside to cook.
Wisk together the two types of vinegar, olive oil, and honey until well blended. Pout the dressing over the ferro. Add the fine cut onions, tomatoes, some torn up parsley and basil, and add salt and pepper to taste.
I added some vegan mozzarella 'Cheeze' on top before I ate it but it tastes yummy without it.

Next time I make this I might add a little spinich or swiss chard. They are my favorite veggies! What's yours any how do you go about cooking it?

I hope you all slept better than I did. My beautiful boyfriend woke me up at 4:30 to the soothing sounds of violence and what sounded like an intense session of saving the world from Nazi zombies. So needless to say I'm a little sleepy and overall unmotivated to get up and start my day. To help with this I decided to make myself chocolate oatmeal for breakfast to jazz up my taste buds and my mood.




I know it looks a little like poo but this sweet chocolatey mixture is delicious enough to satisfy the most picky eater. It's like having dessert for breakfast except it's still healthy! I found this recipe while on the Runner's World website, so it must be nutritious.

Chocolate oatmeal- as you like it
-1 c water
-1/2 c. quick oats or normal oatmeal
-1 tbs. cocoa powder
-1/4 c. fruit of choice (raisins*, banana, raspberries, ect.)
-1 tsp salt (optional)
-1 handful of nuts (optional)
-Preferred sweetener

Bring 1 c. water and salt to a boil in a sauce pan. Stir in oats and continue boiling until cooked. (1 minuets for quick oats and about 10 for normal oatmeal) Be sure to stir constantly or it will burn. Once oatmeal is cooked add desired fruit choice, cocoa powder, and nuts. Stir it all up and sweeten to taste.
*Tip: If you want to add raisins try cooking it with the oatmeal in the saucepan so the raisins get nice and plump.

My favorite ingredient is nice tangy rasins but I couldn't find any today so I added chopped banana and sliced almond. I also had a zingy cup of ginger orange tea that I make myself. It's just Ginger and a hint of cinnamon soaked in hot water and then a little orange peel thrown in to soak. (you can see the little orange peel floating in the photo) It makes for a very bright and refreshing drink in the morning!
